In need of a quick and easy side dish? Look no further than these Cheesy Air Fryer Potatoes. They are crispy on the outside and fluffy on the inside. And as if perfectly cooked potatoes aren’t enough, these potatoes are sprinkled with mozzarella and popped under the broiler for a couple minutes.
The result? Cheesy potato perfection that the whole family is sure to love. I know that mine did!

And like so many of my recipes here on Life’s Ambrosia, this one is super easy to make. Let me walk you through all you need!
What ingredients do you need to make Air Fryer Potatoes?

- BABY YUKON GOLD POTATOES: Yukon gold potatoes are perfect for this because the skin is thin and doesn’t need to be peeled. They also have a rich buttery interior.
- OLIVE OIL: To help crisp up the potatoes
- RANCH SEASONING: Seasoning blends are a quick way to add a ton of flavor. For this recipe, I used Hidden Valley Ranch Seasoning Blend.
- GRANULATED GARLIC: There is garlic in the ranch seasoning but more is always better when garlic is concerned.
- SALT AND PEPPER
- MOZZARELLA: Shred it yourself, skip the pre-shredded stuff. Freshly shredded cheese has much better flavor!
- PARMESAN: Same deal! Freshly grated is best but the stuff in the can will work in a pinch.
- ITALIAN PARSLEY: For a pop of color and a burst of fresh flavor.
How do you make potatoes in the air fryer?
Everyone loves roasted potatoes but you can get the same crispy exterior and fluffy inside in the air fryer in a little less time.

- STEP #1: Toss the potatoes in olive oil, ranch seasoning, granulated garlic, salt and pepper. Mix well so that all of the potatoes are coated.
- STEP #2: Place potatoes in the air fryer basket and air fry at 390 for 15 minutes. Make sure to shake the basket every 5 minutes.
- STEP #3: Place the potatoes in a single layer on a baking sheet. Sprinkle with mozzarella cheese. Broil for 1 – 2 minutes or until cheese is melted and starts to get browned spots.
- STEP #4: Sprinkle with parmesan and parsley. Serve immediately.

Variations:
Add some crumbled bacon to the top for some meaty deliciousness.
You can also switch up the cheeses. Maybe add some cheddar or pepper jack. Just make sure it’s something that melts well!
Switch up the seasoning blends to suit whatever you’re craving. Want something spicy? Try a cajun seasoning blend. Or make a taco version with some shredded cheddar and taco seasoning. Or a pizza version with Italian seasoning and pepperoni. The possibilities are endless!

- 1 pound baby Yukon gold potatoes

- 2 teaspoons ranch seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper

Instructions
- Halve potatoes and toss with extra virgin olive oil, ranch seasoning, garlic powder, pepper and salt.
